Take A Seat – Maybe Mae Is Now Bringing The Drinks To You

The basement bar has had a refresh and is now offering full table service, with a new cocktail menu.

In line with its fourth birthday, basement bar Maybe Mae has had a refresh, and is now offering full table service.

They’re calling Maybe Mae 2.0 a more ‘refined’ version of the bar, with extra seating and a new drinks menu. The bar closed for two days last week to allow for sprucing up and the addition of new long high tables, and the bar now comfortably seats 75 people.

On the new cocktail menu there’s a big focus on local and conscious produce, and drinks are inspired by the geographic areas of South Australia: fresh, spritzed and salted drinks are in the coast section; bright, fruit and herb-forward offerings can be found hailing from the hills, and dry, spice and wine inspired cocktails fall under the valley section.

You can also find a dedicated non-alcoholic cocktail section, with $2 from each concoction going to a related charity.

What you won’t see are any lemons and limes. The long-time cocktail staple has been sidelined due to its lack of sustainability. Instead, mixologists will use more readily available local fruits and vegetables with natural acidity, like rhubarb, apple, pear, and strawberry.
