New Cafe Sibling Opens In The CBD

Coffee lovers get excited because the newest cafe in the CBD has just opened and it looks pretty flash!

Sibling is the newest cafe to hit Gilles Street, and aptly named given both its sister shop next door, Ensemble, and also the fact that the cafe is a pretty serious family affair.

When the Gilles Street space opened up new owners Caitlin and Nathaniel jumped at the opportunity. The creative duo has spent many years living in Melbourne as baristas and running a recording studio. Sibling’s space is relaxed, light and bright, offering fresh pastries, great coffee and more.

The perfect timing of Caitlin and Nathaniel’s impending pregnancy allowed their long due return to Adelaide to begin Sibling.

“It was really a perfect storm of opportunities,” says Caitlin. The shop-front is up and running but stay tuned for their soon to be studio opening up in the warehouse out back.

Eight family members are involved in this creative business, with Caitlin and Nathaniel running Sibling’s floor day to day.

“My younger sister Rady is our chef, mum makes all our cakes and slices, my two older sisters Sia and Anny will be occupying the rear warehouse space with their creative endeavours and littlest sister Isobel will be pulling rockstar shifts and supplying delicious protein balls.”

It really is a family affair!

“We share a passion for being responsible and ethical business owners so we have been really conscious that throughout this process” says Caitlin.

Bouncing ideas off one another played a pivotal role in the business as well as everyone involved. The opening experience is usually an overwhelming experience, however, Caitlin said the most exciting part is being able to experiment with their menu. Inventing dishes in their tiny kitchen isn’t a limitation, only grows their creative ideas.

They’re offering a changing seasonal menu of simplicity in brekkie and lunch. Dependable on what they buy at the market each day will keep their customers on their toes with new specials and fresh ideas. Bagels and soups will be a staple and because it’s for everyone in the family, kids can have the classic eggs and soldiers.

All ingredients are local where possible or made fresh in-house. Fabulous coffee is sourced from Monday’s Coffee Co and daily fresh deliveries of bread and pastries from Dough/Market St are expected.

Their mums famous Lumberjack Cake is a household favourite and it will be yours too once you’ve tried it.

Currently, they’re only opened during the week for a delicious feed but as of July they will be opening a special weekend brekkie menu from 8am-2pm. Heroes on the menu will include waffles, baked eggs and a Mexican themed breakfast (yum!).

“Customers can expect to get great coffee every time served by our wonderful friendly staff. There’s no pressure to get in/get out, just spend some time and enjoy!” says Caitlin.

Best pop in for a visit at 96 Gilles Street, Adelaide!
