Pucker Organic Produce at The HWY

Matt FullerThe Head Chef at The Highway, Matt Fuller, has sourced local organic produce to create a teaser menu in conjunction with The Highway’s latest Bistro promotion, Pucker Organic Produce.

Menu items such as char grilled Spear Creek Saltbush lamb loin (Flinders Ranges) with turnip gratin, rocket and feta salad finished with preserved lemon glaze are made from 100% organic South Australian produce and have proven popular with Bistro and casual diners in the hotel.

Matt has gained his wealth of knowledge and experience from across the globe, travelling extensively in his younger years.

His belief is simple; no matter how great the chef, if you put quality ingredients into each dish, your end product will be equally as good.

Matt’s attraction to using organic produce stems from his passion for the environment and ensuring future generations will grow up enjoying Australia as much as he has.

Animals being raised specifically for organic food live a relatively stress free life enjoying free grazing on the land instead of manufactured, crowded and often deplorable living conditions.

Organic farmers use less water, energy and don’t use pesticides, resulting in a lighter carbon foot print and ultimately, tastier produce.

Jamie Oliver’s rustic style of cooking and presenting food has inspired Matt in his career and has certainly influenced Matt’s latest menu.

The Highway have managed to secure 2 VIP tickets to Jamie Oliver’s Melbourne show including a chance to brush shoulders with Jamie at a cocktail party before the show.
