Let The Spring Feasting Begin: Your Guide To Eating Spring In A Day

Get your stomachs prepared, have your stretchy pants at the ready and the BBQ heating up, because we have the guide to eating Spring in a day, and by golly is it delicious!

Food. Just one of the best things about life. Not only because it is delicious but also because of the way that it can bring people together. With the arrival of Spring (hello, hi) comes an abundance of fresh, in season and, let’s get real, totally mouthwatering produce and flavours.

With all of this in mind, and whilst you ignore those hunger pangs in your tummy, get prepared to drool all over your computer screen as we have enlisted the help of food expert, Kate Roberts (owner of Food By Kate) to give us a guide to ‘Eating Spring In A Day’.

SMOOTH (IE) OPERATOR

Get your day started right with a fresh, delicious and healthy (that means we can have as much as we want then, right?) smoothie.

The freshest young ginger is currently in season and so juicy it packs a massive anti-inflammatory punch. Add it to a smoothie along with a Lenswood Pink Lady Apple, baby spinach, fresh seasonal pineapple, ice and coconut water… Forget good, that is what we call a great start to the day!

LUNCH O’CLOCK

When you get the lunchtime munchies why not whip up something simple. Asparagus is in season and ridiculously delicious grilled on a BBQ. Served with some crusty bread, crunchy grilled prosciutto and sweet juicy rockmelon, we have to stop because we can’t handle how delicious this sounds.

THAT’S LAMBTASTIC

Everyone knows Spring means lamb. They just go hand in hand. As the days start to lengthen we start to enjoy cooking (and drinking) outside more… One of the best things to throw on the barbie (sorry had to do it) for a scrumptious dinner is a little bit of Spring lamb.

Roast a leg of lamb or grill some loin chops and pair with a salad of seasonal shaved fennel, blood orange and black olives. Mix the juice of the orange with some olive oil and red wine vinegar and a drop of honey and you have a dressing. Slice the lamb and top with some greek yoghurt and fresh mint.

SWEET ENDING

To Kate’s speciality, dessert! When Spring hits, lemon…. Anything with lemon! Lemons are in abundance during this time of year so you just can’t go wrong. A tangy lemon tart topped with Creme Fraiche and fresh raspberries will always be a showstopper, but a really simple and easy recipe that will still impress is a lemon granita…

With just two ingredients, lemon juice and sugar, it will literally be the easiest dessert you have ever made. The sugar is dissolved into the juice over a low heat, and when it has cooled you then place it into a shallow dish and into the freezer. Every 30-40 minutes you take a fork and scrape the mixture forming little ice particles until the whole dish is delicious shaved lemony ice. It’s the best served in a cold glass with the shortest of shortbread.

And there you have it… The most delicious day you will ever have, from wonderful start to glorious end. Enjoy cooking (and eating) up a storm with some delicious Springtime ingredients!
