HVR To Turn Heads This Summer With New Head Chef

Multi-award winning Hills icon Hardy’s Verandah Restaurant is set to surge into summer, as new Head Chef takes the reins from Wayne Brown.

Multi-award winning Hills icon Hardy’s Verandah Restaurant is set to surge into summer, as new Head Chef Jin Choi takes the reins from Wayne Brown.

After bursting onto the vibrant Adelaide food scene in February this year, HVR has secured a steady stream of success and accolades with its contemporary, locally focussed menus and opulent, elegant dining setting set among the rolling hills of Piccadilly Valley.

Chef Wayne Brown led the Hardy’s Verandah Restaurant emergence to widespread acclaim and successor Jin Choi is preparing to tantalise the tastebuds of guests as he unveils a world-class dining experience from 2 December.

Korean-born Choi has honed his craft in some of the country’s best restaurants including most recently 2IC at three hatted Sydney icon The Bridge Room, three hatted Momofuku Seibo and Adelaide’s own Magill Estate; all of which recently placed in the top 15 of Gourmet Traveller’s National Top 100 restaurants. Choi was also one of a lucky few Australian chefs to be part of Noma Australia’s Sydney pop-up led by culinary god René Redzepi.

Choi brings his unique and intuitive approach to the menu offering celebrating South Australia’s best produce and continuing the restaurant’s ‘Valley to Verandah’ ethos. He is very serious about treating ingredients with respect and delivering delicious, surprising dishes. When asked about the new menu he says he doesn’t want to give anything away at this stage however looks forward to sharing his dishes with diners over coming weeks.

Hardy’s Verandah will continue its popular four course ‘short story’ menu however have added the luxury of choice to the menu with their new four course, four choice format. The seven course ‘long story’ menus remain unchanged and are available Thursday to Sunday. Also new is a two and three course option for lunch.

With a swag of awards under its belt since launching earlier this year, including: Two Chef Hats in the AGFG Awards, Best Restaurant (Accommodation Division) in the AHA SA Awards; One Star and #2 Restaurant Regional SA in the Gourmet Traveller National Restaurant Awards; and Best Listing of SA Wines plus Two Glasses in the Australian Wine List of the Year Awards, HVR is at the top of every dining wish list.
