Dasha Gaivoronski’s Warming Winter Apple Rhubarb Crumble

Lifestyle and Fitness guru Dasha Gaivoronski, aka @bagsandbunnies, shares her healthy recipe for this classic winter warmer.

Earlier this week we introduced you to a true guru of Adelaide – lifestyle and fitness expert Dasha Gaivoronski, aka @bagsandbunnies. In April this year Dasha published her first ever e-book, ‘Fit Treats’, a collection of her favourite healthy recipes for dessert tragics like herself who want to avoid dietary enemies like refined sugars. And she’s been kind enough to share some of her favourite recipes with Glam, starting with her take a delicious winter classic.

Apple Rhubarb Crumble

I’ve come up with this recipe in an attempt of recreating the healthier version of an apple crumble so you can still cozy up with a favourite winter comfort without worrying about over-indulging! For this recipe I used almond flour and nuts instead of plain, coconut oil instead of butter and maple syrup instead of processed sugar.

Ingredients
To make the Apple Rhubard Compote:
3 Apples
3 cups fresh chopped rhubarb
4 tbs Maple syrup
A pinch of ground cinnamon, cardamom, ginger

To make the Crumble:
½ Coconut oil, melted
½ cup Almond flour
½ cup Toasted walnuts
3 tbs maple syrup

Instructions:
Peel the apples and thinly slice, removing the core. Combine the apples and rhubarb in a saucepan with maple syrup and leave to simmer for approx. 20 minutes, checking occasionally and adding water if required. After 20 minutes, take off the heat and leave to cool.

To make the crumble, add the dry ingredients into a large bowl and stir. Add oil and maple syrup, then rub the mixture between your hands until a crumb forms. Spread the crumble between the individual baking dishes by spooning it over the rhubarb mix, and baking it in the oven for 10-15 minutes until crumble is golden.

Remove and allow to cool for 10 minutes before serving with coconut or greek yogurt!
