Described as “the world’s first specially bred miniature high quality apple developed through cross breeding”, the RockIt is grown under licence and exclusively in Australia by Adelaide Hills-based Next Fruit Generation Australia.

“Now that we’re in apple season, we’ve decided to use Tasting Australia to showcase the different varieties of apples from the Lenswood region, with the RockIt apple making its Australian debut on our degustation menu on Saturday May 7 and Sunday May 8, which also happens to be Mother’s Day,” co-owner Sharon Pearson said.

That’s welcome news to Mt Lofty Ranges Vineyard’s Head Chef Matt Fitton, especially as he’s a seasoned disciple of menus featuring contemporary creations made from the freshest local ingredients.

“As every chef knows, there’s nothing better than cooking with the freshest produce available and we’re surrounded by it here in the Adelaide Hills,” Matt said.

He added that each course promises to be a culinary journey also featuring other fresh and foraged produce all from the Adelaide Hills and the waters off our coast.

“But more than being a unique gastronomic adventure, I will be on hand to chat with diners and share the stories behind all the various ingredients on the plate while Sharon and partner Garry Sweeney will discuss the matching of our 5-Star winery’s single vineyard award-winning wines with the dishes,” Matt said.

The menu includes such enticing and seductive creations as cured kingfish with an apple and lime broth and coriander oil; along with poached marron with dry pork, tarragon, compressed apple and crustacean sauce. Then there’s apple wood smoked duck yolk with potato, truffle and roasted chicken juice; a venison loin with macadamia, apple, beetroot and venison reduction and; to round it off, Pedro Ximenez ice cream with spiced apple, brown butter and hazel nut.
