Belle’s Hot Chicken opened a year ago after Morgan McGlone, who once worked under Luke Mangan in Sydney, learned the magic of the perfect southern spicy fried chicken at the famed Husk in Nashville.

The magic, it turns out, is a two-day method. Forget the Colonel, McGlone has his own herbs and spices.

Diners can expect a hotness range of “Southern” (deep fried in a mixture of whisked cottonseed oil, butter, cayenne pepper and paprika) to chilli-coated “hot”. If you feel like going to the Melbourne restaurant, you can get the “really f—ing hot” option (chicken coated in habaneros with seeds – consume at own risk).

Opening specially for the event, Africola will be expecting a great turnout of chicken-lovers, explains Welgemoed: “When Belle’s Chicken did a similar take-over at Icebergs in Bondi Beach, they sold out of everything within an hour.

I’ll be making some sides like famous green beans, grits and coleslaw, but I’ll mostly just be watching the fried chicken master Morgan McGlone take over my kitchen

Natural wines featured at the Belle’s Chicken take-over of Africola will include Jauma, Tom Shobbrook, James Erskine, Anton von Klopper, Gareth Belton and Michael Downer.
